Climate food: The climate food is made up of fresh, purely plant-based and sustainable products. There is no rice, pre-made mashed potatoes and French fries, as well as pre-made products such as broccoli wedges or sesame slices. No frozen products, dry products or canned goods are used. Grain products such as spelled, buckwheat, bulgur, millet and amaranth or other protein-containing foods such as nuts, vegetables and vegetable oils are essential components of climate food. More attention will also be paid to seasonality.
Vegetarian: Dishes are prepared without fish or meat ingredients. Dairy products and eggs may be included.
Sustainable agriculture: Sustainably produced food: These dishes are made from food that, for example, ensures the regional origin of the meat. The animals are kept in accordance with the Animal Protection Act and are species-appropriate. Genetically modified feed is prohibited, and animal feed must consist of sustainably produced feed. Growth accelerators, performance-enhancing drugs and antibiotics are also prohibited. For the plant products used, synthetic plant protection products and easily soluble mineral fertilizers must not be used. Ionizing radiation is not used for preservation purposes, nor is genetic engineering.
